Microgreens are a quick and easy way to get more vegetables into your daily routine. These tiny immature plants are grown indoors and widely available from Kentucky farmers all year-round. They are also a good source of vitamins and minerals that can help boost your immune system AND (fun fact alert!) they contain between 4 to 40 times the nutrients by weight than fully mature plants.
One of our favorite ways to try microgreens is in smoothies with this adapted recipe from Spade and Table Farm. We hope you enjoy this and make it your own to get more local, organic veggies into your day!
1 heaping cup of microgreens
1 cup blueberries
1 cup of orange juice
¼ cup of walnuts
¼ cup of yogurt (optional)
1 cup of ice
Add all the ingredients in a blender and process until smooth.
Adjust thickness accordingly. Add more liquid if it is too thick and add more microgreens or fruit to thicken if needed.
If looking for additional fiber consider adding a carrot or a turnip to the smoothie! This is a Spade and Table Farm Favorite.
Experiment with different microgreens. Each one offers a different flavor. If you are looking for something more mild try sunflower microgreens and something more spicy or earthy try kale or broccoli microgreens.
